In todays fast paced world, everyone is in a hurry to do nothing! No one has time to cook a good meal nor does anyone have time to exercise. Eating healthy and exercising daily should be apart of everyones regime. However, with fast food chains, overworked individuals and microwaved foods, most of us don't want to think about cooking a healthy meal let alone shopping for the ingredients after a hard day of work. Simple recipes usually always work best when your time is very limited. There's a majority of simple recipes that are even healthy for you, just like the one that I will be sharing below.
Baked Salmon with Rainbow Peppers
4 sheets of Heavy Aluminum (12 x 18 inches each)
4 Salmon fillets (4 to 6 ounces each)
4 medium red, yellow, or green bell peppers cut into strips
1/4 cup butter or margarine, cut into pieces
2 teaspoons of dried basil
Preheat oven to 450 degrees or grill to medium high. Center one salmon fillet on each sheet of aluminum. Arrange pepper strips around salmon. Top with butter and sprinkle with basil. Bring up foil sides. Double foil top and ends to seal packet, leaving room for heat circulation inside. Repeat to make four packets. Bake 18 to 20 minutes in oven or grill 16 to 18 minutes in covered grill. Makes 8 servings
Add a tossed salad and WALA! you have a complete meal!
